Scottish Contemporary Cuisine
Scotland is world famous for its produce, such as Salmon, Black pudding, Scallops, Aberdeen Angus beef, but is less famed for its cuisine. At any rate,Traditional Scottish dishes like haggis and porridge are well known and have a long history. But modern Scottish food is all about fresh flavours, quality ingredients and mixing the old with the new.
Here at Pierre’s we specialise in Contemporary Scottish Cuisine where, as in the “Auld Alliance”, the old is borrowed from French Cuisine (among other inspirations) and the new is represented by fresh Scottish produce cooked with a modern twist by the expert hands of our chef and owner Alex Leask.
Historically, Scottish cuisine relies on its excellent natural larder of game, dairy products, fish, fruit and vegetables. The main factor in traditional Scots cooking is simplicity and a lack of spices from abroad, as these would have been very expensive to import. However, Scottish Cuisine has long been associated with French cuisine: during the Late Middle Ages and the early modern era, French Cuisine played a role in Scottish cookery due to cultural exchanges brought about by the “Auld Alliance”. This was especially true during the reign of Mary, Queen of Scots, who, on her return to Scotland, brought an entourage of French staff who are believed to have been responsible for revolutionising Scots cooking and for many of Scotland’s unique food terminology, such as Ashet (from Assiette, plate) and Gigot (from Gigot, leg of mutton or lamb).
In a nutshell, Contemporary Scottish Cuisine is all about showcasing excellent Scottish produce by preparing it with fresh ingredients and sticking to simplicity. Let the ingredients speak for themselves, if you like. Culinary inspiration comes from the above mentioned French cuisine, but Alex takes much inspiration from Italian cuisine as well.
We are best known for our steaks, (all our beef is supplied by local butcher Malcolm Allan) simply served with caramelised onions and sauteed mushrooms, and our Stornoway Black Pudding and Orkney hand-dived Scallop starter. But we also offer a variety of fish, meat and, according to the season, game and seafood. For those with more of a sweet tooth, we are also renown for our Orkney Fudge cheesecake and home made Profiteroles.
